You got so caught up fine tuning the main course for your lovely dinner party, that you've forgotten about that fancy Souffle. Not to worry. Your guests will think you're a genius when you place this extraordinary creation in the center of your dining room table. The most scrumptious, no fuss, ice-cream cake you will ever make, in just 15 minutes.

Grab a pack of un-iced cookies, a tub of pain old vanilla ice cream, a butter knife and a bottle of syrup.
My preference is Cherry flavour with chocolate cookies, the choice is yours of course, but if your guests are enjoying Red Wine with dinner, cherry will be preferrable.

Use your knife to butter each cookie, and start stacking lenghth ways on a foil sheet.

Twist the ends of the foil to form logs, and place them back into the freezer for 2 hours.

When you serve your guests their dessert, the ice-cream will have soaked into the cookies creating a cake-like consistency. Who new those were cookies?

I have tried (too) many variations of this easy recipe, and although Christmas time is always a bit nippy, it's never too cold for ice-cream cake. The Christmas version uses Cherry syrup, with crushed "After Dinner Mints" on top. If that's a little too rich, you might drizzle Egg Nog over it when serving.
For Easter, you may like to try banana syrup or banana pudding mix in the ice-cream. Either way you will always get rave reviews for your fabulous creation.
